Apple & Berry Strudel

OMG! I forgot the strudel. I opened the oven to see how burnt it was and actually it was wonderfully golden and crispy and the apple was soft and sweet….. interesting! Well they say you learn best by making mistakes…so I’ve said cook it for approx 40 mins but if you have a bit more time….. don’t worry about leaving it in for a bit longer (just check it doesn’t burn)

Anyway….. if you’re looking for a dessert that has no refined sugar, tastes delicious and provides one of your 5 a day you’re in the right place. Make this Apple & Berry Strudel… it’s delicious

Cheesecake Pots

These Cheesecake Pots make a delicious dessert, snack or breakfast.

They are made with a layer of crunchy homemade granola, a layer of creamy light whipped yoghurt and cream cheese and topped with fruit. I like mixed berries and passion fruit.

It’s super easy to make and the extra granola can be eaten for breakfast or as a snack and lasts for ages in a sealed container.

Dairy foods are a great source of calcium (healthy bones) and Vitamin B2 (helps the body to release energy from foods)

Mushroom Noodle Broth

I don’t really know what to say except make this Broth. It’s totally delicious. If you like mushrooms – You won’t regret it.

It’s inspired by an Itsu recipe and then I added a few things. It’s got protein (tofu) carbs (noodles) & lots of veg (mushrooms, edamame, spinach) so it’s a meal in a bowl. Warming, filling, delicious.

Sweetcorn and Spinach Fritters

What’s the best way to get kids eating vegetables they don’t like?

Grate them or cut them up, mix with eggs, flour and milk and fry them – magically turning them into delicious fritters/latkes

But I don’t like spinach/courgettes/kale/sweet potato????

Butter Bean Dip

Do you like Butter Beans?
(Shhh…I’m not a big fan)
But….I do try to find ways to eat different foods that might not be my favourite. So I’ve been experimenting with Butter Beans and this recipe is my favourite way to eat them. It’s seriously quick and easy to make too.
 
This Butter Bean Dip is a good source of plant based protein, as well as fibre (which many of us need to eat more of) 
Serve it on crackers, toast or with crudites

Sumac & Za’atar Cook-a-Long

Sunday May 9th at 4-5.45pm

Do you cook a lot with SUMAC & ZA’ATAR? or have you never heard of them? Or maybe you’ve bought a jar of sumac or za’atar that is now sitting in the cupboard?
Well….our next Cook-a-Long, on Sunday 16th May from 11-12.45 ish (note different time) will be 5 delicious recipes using Za’atar & Sumac.
 
For those who don’t know, Sumac and Za’atar are Middle Eastern herbs/spices that taste fabulous. Sumac is a tangy spice with a sour lemony flavour. Za’atar is a delicious herb mix made from sesame seeds, sumac, oregano. thyme, cumin & coriander
 
You can choose to make all 5 dishes and you’ll have both lunch and dinner sorted (plus maybe Monday’s lunch & dinner too) or leave one out and just watch me for that recipe.
Each dish will be for 2, 3 or 4 people so nothing needs to go to waste and you can reduce quantities too if that helps.
 
We will be making: –

1) Sumac & Pomegranate Chicken – This is soooo good. It’s sweet and tart roast chicken served with a rich onion sauce sprinkled with fresh herbs, pine nuts & pomegranate seeds. It looks fabulously colourful too. If you are vegetarian – substitute the chicken for cauliflower steaks
2) Za’atar Chick Pea Salad – super quick to make – great for veggies – its herby, sharp, creamy and delicious
3) Za’atar Plaice – Another really quick dish –  A great way to add flavour to your fish
4) Sumac Tabbouleh – Tabbouleh with a hint of citrus

5) Sumac & Pitta Chips on Fattoush Salad – The pitta chips don’t last long in this house. Great as a snack, replacement for crisps and perfect on top of a Fattoush Salad

Garlic Mushrooms

Crispy. Garlicky. Mushroomy! Yum.

These garlic mushrooms are baked not fried and are crunchy and delicious. If you have an air fryer, they take less time to cook but they’re really delicious in the oven too. You can experiment with flavours if you like too… add some harissa if you like it hot, or smoked paprika if you’d like a smokier flavour or just enjoy them as they are.

Mushrooms are a good source of Copper, Selenium, Vitamin B2 and Vitamin B3

‘Duck’ and Pomegranate Salad

Looking for a filling and nutritious Salad? This salad is the perfect way to use up leftover Duck (Turkey) from the Fake Duck (Turkey) Pancakes by turning them into a delicious sweet and tart salad.

Turkey is a low fat source of protein, which we need for a healthy immune system. The pomegranate is a good source of Vitamin C and Vitamin K.

Israeli Salad

This salad is found all over Israel. It’s called Salat Katzutz (Chopped salad) and is served for breakfast, brunch, lunch, dinner, with shawarma, falafel etc…

Just like Jewish Chicken Soup, many of us make it differently. I make mine with just tomato, cucumber & lettuce. When the kids are around it’s with tomato, cucumber & gherkins, for a dinner party I’d probably add parsley & red onion. Either way its super simple, delicious and goes with everything…well almost!
