Vietnamese Chicken Spring Rolls

Vietnamese chicken spring rolls. A delicious summer meal made with 2 chicken breasts that fed 5 of us easily. The Vietnamese rice paper isn’t a store cupboard ingredient but can be bought in most big supermarkets. Delicious

NB Make sure you buy the wrappers that are made of rice. The ones with wheat will not work. They may be called rice paper wrappers or Vietnamese spring roll wrappers

Ever wondered how much more expensive skinned and boned thighs are compared to doing it yourself?
I’m going to invest in a special boning knife which should make it even quicker but this is just a normal kitchen knife.
