We have this CHICKEN SOUP aka – BONE BROTH every Friday night. It’s supposed to be great for fighting colds and flu because it contains lots of minerals that support your immune system and the amino acids it contains reduce inflammation. It also tastes delicious 😋

Beef and Mushroom Pie

This Beef and Mushroom pie is based on a Joe Wicks’ recipe. It takes 15 mins to prep (but longer to stew) and whilst it’s cooking it makes the kitchen smell AMAZING. It contains loads of veg, as well as iron rich red meat and is a brilliant dish for cold wintery days.

Vegetable Pad Thai

Vegetable Pad Thai… made with tofu and egg. I got 100% approval which is unusual in my family! It’s not the prettiest but tastes amazing.
To make it vegan just leave out the egg.

Chinese Chicken Wraps

There is something so moreish about the mince in these Chinese Chicken Wraps that it seems to be nibbled on continuously even after dinner is done. Not the prettiest but the taste is worth it. It can be made with turkey or tofu too. I now have a slightly quicker baked version of this too…Check out Ellie’s chicken wraps

Edamame and Chick Pea Curry

This curry is quick to make and really delicious. The chick peas and soy beans (edamame) are both great plant based sources of protein, it contains carrots, spinach and onions too…. so also contains lots of your five a day. Win win win.

Hawaiian Poke Bowl

This Hawaiian poke bowl is super quick and easy and absolutely delicious. EVERYONE loves it, it’s all raw so it’s SUPER HEALTHY and the prep can be done in advance and left in the fridge. Swap veggies for whatever you have/like. Add lime juice, soy sauce and sesame seeds. What’s not to love? Perfect packed lunch too.

Vietnamese Spring rolls

These VIETNAMESE SPRING ROLLS are vegan, delicious, fresh and everyone makes their own… which is fun. I serve it with poached chicken and tofu and everyone chooses their own protein. I make double the quantity of salad and eat it throughout the week.

NB – The Spring Roll wrappers must be made of RICE. The ones for fried spring rolls will not work.
