Creamy Vegan Berry Tart

This @goodful recipe for creamy vegan berry tart is delicious. It’s not as quick as my usual recipes because you have to pre-soak the cashews overnight and then leave the completed tart to set in the fridge for an hour at the end but the actual prep time is quick. It’s really good too…sweetened with dates, a little maple syrup and the berries. Try it!

Pesto Courgetti with Perfect Poached Eggs

Making the pesto yourself means that you know exactly what’s in there. You can make it dairy free, switch up the nuts, use more spinach, less garlic, whatever you like and of course it means it’s super fresh. This recipe is ALWAYS a success. Everyone loves poached eggs and the colours of the salad are beautiful.

MEATLOAF WITH SPINACH & COURGETTE SERVED WITH MUSHROOM GRAVY

This meatloaf contains 4 different vegetables. Also delicious with small quantity of mustard powder and soy. One friend made it and sent me this message “My husband can’t stand spinach and courgette but he loved this” SUCCESS 😁😁😁😁😁

There are 2 slightly different versions of this recipe. The top one is made with bread, soy sauce and mustard powder. I’ve noticed that I haven’t included them in the method – just add them when you add the herbs and tomato puree. I’ll update soon.

 

The second version is suitable for Pesach – a Jewish holiday where people can’t eat leavened foods for 8 days.

Beef Strudel with Mushrooms, Spinach and Pine Nuts

This BEEF STRUDEL WITH MUSHROOMS, SPINACH & PINE NUTS always gets devoured. I make double quantity and freeze half, so that after a busy day I can just roll the meat up in the pastry and dinner is in the oven in 4 minutes.

Thyme and Onion London Broil

This London Broil recipe takes about 5 mins to prep…. leave it overnight to marinade and then just 16 mins to cook. The flavour is intense and delicious and the meat is moist and juicy.
Beef is high in Vitamin B12, which keeps red blood cells healthy and helps prevent tiredness.

Sesame Spinach Balls

These sesame spinach balls make a great snack, starter, nibbles or a side dish and are a brilliant way of getting kids to eat spinach. I make up the sauce and leave it in the fridge. When we want the balls, I just boil up A LOT of spinach, form into balls, drizzle with the sauce and sprinkle with sesame seeds. Simple and delicious.
