Thai Salmon Fish Cakes

These salmon fishcakes taste great. They are baked not fried so they are lower in fat than most fishcakes. Salmon is high in protein and
low in saturated fat. It is a great
source of omega-3 fatty acids. Research shows that diets rich in omega-3 are linked to lower risk of heart disease. Omega-3 is important for brain health too.

Peruvian Salmon Ceviche

This Peruvian Salmon Ceviche makes a really fresh, delicious, colourful dinner. Made with thinly sliced salmon, tomato, avocado, spring onion, soy beans, mango and a sauce (Tiger’s milk) made with garlic, ginger, lime & soy. I serve it with brown basmati rice. Really light but filling.

Peruvian Salmon Ceviche Recipe Card

Blueberry Flapjacks

These BLUEBERRY FLAPJACKS take just four and a half minutes from starting to getting in the oven. They contain less than half the quantity of ‘butter’ (I use coconut oil) and 2/3 less ‘sugar’ (I use maple syrup) than traditional flapjacks.

They contain 250g blueberries, which contain Fibre, Vitamins C, K and Manganese.  Manganese is needed for bone formation. So if you want a delicious flapjack….. this is a much healthier version than ‘normal’ flapjacks.

Asian Chicken, Vegetable and Noodle Broth

This tastes so good. It’s filling nutritious and can be made with the vegetables that you like. I love the enoki mushrooms that add the most amazing texture – it’s the kids’ favourite bit too but you can make it with normal mushrooms. Basically make a stock and add chicken pieces. Make a chilli, garlic, ginger paste- add it,  add noodles and vegetables, season and you’re done! Warming, tasty Asian Chicken, Vegetable and Noodle Broth.

Mixed Bean, Thyme and Vegetable Pie

VEGETABLE, THYME AND MIXED BEAN PIE. I think we need to try to eat a bit less meat and have a few more vegetarian meals every week. This pie was quick to prep, easy, tasty, nutritious and vegan.
