One Pot Chicken Shwarma with Chick Peas and Rice

Delicious and super easy. 
Please note that the quantity of stock needed depends on the size of your dish. The chicken should be almost covered with water, to ensure that the rice is cooked, so use your judgement please.

Apple, Raisin and Oat Cookies

I saw a very similar recipe for these APPLE, RAISIN & OAT COOKIES on www.sneakyveg.com This is a slightly adapted version and they are soooo good. I often make up apple purée and keep it in the fridge to eat with pancakes or yoghurt during the week, but now it just keeps being made into these delicious and very moreish cookies. They freeze brilliantly.

Roasted Butternut Squash, Broccoli and Pecan Salad

This brightly coloured salad is crispy, crunchy, filling and very nutritious. Apart from cooking the butternut squash, it is also really quick to make. I would cook the whole butternut, then keep half in the fridge to add to salads, soups, buddha bowls throughout the week.

Za’atar Plaice with Cauliflower and Pomegranate Tabbouleh

I had a request for this Za’atar Plaice recipe. The fish is SO EASY to make, takes about 2 mins to prep and is totally delicious, moist and tasty. Obviously you can serve it with whatever you like 😉 but this raw cauliflower tabbouleh goes with it very well. This is an adaptation from a brilliant mindfulchefuk recipe

WALDORF SALAD WITH QUINOA… This no mayo version of a Waldorf salad is fresh and crunchy. Made with mixed leaves, celery, apple, pomegranate, toasted walnuts, quinoa, S&P, lemon and a drizzle of olive oil. I’m looking forward to lunch already!

Oregano Pulled Chicken

Oregano Pulled Chicken – prepped in under 2 minutes. 👍🏼 Cooked in the SLOW COOKER for 4 hours… then you just shred it.

The recipe is from www.hungrylittlebears.wordpress.com with a few tweaks.

Served in a wholemeal tortilla wrap with coleslaw.

It’s moist, tasty and super, super quick to make.

My kids don’t like beetroot and I do. I also know it’s really good for you! So I decided to hide it in cocoa, orange and dates and call the end result RED VELVET MUFFINS

Banana and Oat Pancakes

These Banana and Oat Pancakes are a totally delicious weekend breakfast. We add Greek/natural yoghurt (boosts the protein content) and mixed berries (loads of nutrients) so breakfast starts with 5 of our 5-a day and we’re full till lunch.

Roasted Tomato & Red Pepper soup with optional Basil Smash

This soup takes longer than the usual 15 mins to make…although most of the time is roasting and then sieving it at the end but it’s a fabulous way to use up tomatoes that are a bit past their best or have gone a bit squishy.
