A client asked if I could teach her how to make a healthy non dairy Beef Stroganoff. Challenge set and here it is. It’s full of iron rich beef and spinach and contains onions and mushrooms too.
Tuesdays are my busiest day… not home till after 6…. then netball at 8. So I need a dinner that is quick to make and light. This is perfect. Yuzu, lime, mirin and soy – poured over salmon. The salmon cooks whilst I prep the veg and noodles, lay the table and clear up! 18 mins start to table. 👌

BLUEBERRY FRUIT ROLLS – there is nothing but 100% blueberries in these sweet, chewy fruit rolls. By dehydrating the blueberries you end up eating a lot more….. so more fibre as well as more sugar. My kids don’t like fresh blueberries (no idea why!) so this way they’re actually eating blueberries…. with no added rubbish.
This sweet and hot soup is very filling. I tried it with whole corn cobs but decided that frozen corn was much easier and quicker. Adjust the chilli to taste – it adds a warming kick.
These pesto chicken balls are easy to make, freeze brilliantly and are great in packed lunches. I make the pesto myself so it is fresh, fragrant, dairy free and I know exactly what ingredients I’m eating.
This apple and honey cake is healthier than a usual honey cake as it contains lots of fruit. It is sweetened by the apples and raisins (and orange if you choose to include it) so contains less honey. The cinnamon disguises the wholemeal flour too. It doesn’t last very long in my house…. I have started making muffins from the mixture too because who doesn’t love a muffin?

YAY …. I got this salmon perfect ….. even the one who doesn’t like fish liked it!!! 👍🏼 5 mins prep time, 18 min cooking ….. Yummy, moist, tasty fish. Delicious served with noodles and stir fried veg. Filling, nutritious and quick.
This sauce takes about 5 minutes to make and tastes really good. It’s a strong flavour “zingy” and my kids love it. It works really well with salmon too – Salmon recipe available in the fish section
