These Courgette and Spinach Fritters are packed with vegetables and are very filling and tasty. I serve them with poached eggs and a lemon & garlic yoghurt on top. I originally made this quantity for 5 but 3 of us managed to polish all of these off!

Courgette, Apple and Raisin Muffins

I’ll be honest…these muffins are marmite! I LOVE them. So do half my family…the other half..not so much! They’re not sweet – the sweetness comes from the apple, raisins and a little maple syrup but I don’t like things that are really sweet so they’re perfect for me. I’ve had many people taste test them…. the response is either ‘perfect..don’t make them sweeter’ or ‘not for me’ I’d love to know what you think if you make them.

Top Tip for Zesting Oranges

If you find zesting oranges a real faff and end up spending ages scraping the zest off your grater …. try this microplane zester. It’s brilliant. Watch the video to see how quick and easy it is.

Fake Duck (Turkey) Pancakes

These Fake Duck (Turkey) pancakes are not my recipe….. they were given to me by my friend Danni Y a few years ago and are very very popular with EVERYONE (I make it with mushrooms, tofu or seitan for non-meat eaters) They are super easy to prep and are much healthier and cheaper than duck. I’d suggest making double and either freezing or eating 2 days in a row!

 

Just be careful to look at the sugar content of your hoi sin sauce as they vary widely

Spinach, Coconut and Chilli Soup

This smooth and warming Spinach, Coconut and Chilli Soup is a delicious, vibrant, warming soup. The coconut makes it really smooth and creamy and the chilli adds heat. The spinach is a great source of Vitamin K that is needed for blood clotting and maintaining bone health.

Once, I forgot that it was spinach not broccoli and made a new soup – that is a great way to use up broccoli that is slightly past its best. Check out my other post for that recipe!
