Granola – low sugar, high protein

This granola is a crunchy delicious breakfast made from oats, seeds and nuts that contains lots of different vitamins and minerals.
Just in the pumpkin seeds you’ll get protein, omega-3, vitamin K, iron and copper (to name a few)
This home-made version contains less sugar than most, with just a little maple syrup or honey to add some sweetness.

Served with yoghurt and fresh fruit, this granola makes a great breakfast or snack.

I am selling this delicious Granola or an Apple & Honey version. It can be posted or collected.

Vegetable Samosas

These are a slightly longer recipe than usual because making each samosa is a little fiddly but worth it in my opinion. They are made with peas, sweetcorn, spinach, carrot and edamame to add little extra protein. They are baked not fried so they are healthier than usual.

Chicken Fajitas with Guacamole

Creamy guacamole with the tang of lime, caramelized pepper and onion, spicy chicken thighs in a warm tortilla wrap. Delicious.

Roast Cauliflower

“That won’t last long” said one of my children whilst I was making this video and they were right. Bizarrely this roasted cauliflower works as a snack as well as a side dish (who would have thought) and when I tell the kids off for ‘picking’ as they walk past…I then think…why am I complaining? They’re eating vegetables! And a nutritious, fibre rich cruciferous cauliflower…GO FOR IT! ….
and this recipe uses all of the cauliflower too so there’s no waste either.

People who eat large amounts of cruciferous vegetables (Cabbage, Brussels Sprouts, Broccoli, Cauliflower and Kale) have been shown to have a lower risk of cancer.

Apple coring without hurting your fingers!

I core a lot of apples, as I make apple rings/crisps most weeks and I was forever hurting my fingers as I removed the core from the corer. This way my fingers remain pain free and in one piece!

Broccoli, Red Onion and Cashew Salad

This raw broccoli salad is colourful, crunchy, nutritious and super easy to make. I don’t remember where the original recipe came from but it contained pecans (which I interchange with cashews)
I swapped the dried cranberries for pomegranate to make it a bit healthier.

Rice Pudding

I don’t often make dessert but if I do, this is one of my son’s favourites. I make it with maple syrup instead of sugar and I use half the quantity used in usual rice pudding.

Dairy products (milk) are a good source of Vitamin A, B6, B12, D, Calcium, Iodine, Phosphorus, Serotonin, Zinc and more.
Both the Vitamin A and Calcium help with the growth of bone – so is particularly good for children, teenagers, menopausal women, the elderly….. So enjoy your rice pudding!

Rosemary Sun-Blushed Tomatoes

These Rosemary Sun-Blushed tomatoes are super simple to prep, have a deep sweet flavour and are much healthier than the shop bought (smothered in oil) versions. They taste amazing on salad or with pasta. They are based on a recipe given to me by the lovely Jack Williams which I edited slightly.
