Group Hands-On Cookery Session

These lovely ladies were having a staff training day for their Charity @pjlibraryuk
They wanted to start with something fun and different so they booked me for a hands-on cookery session.
Together we made Sushi, Vietnamese Rolls and Peanut Butter, Banana and Chocolate Bites. They all enjoyed the cooking and eating!

Feedback was “Thank you SO much for today! Everyone had such a great time and loved all the food you taught us how to make. Easy, healthy and delicious – amazing!” and then after the weekend I got another message saying “My team all made the Vietnamese Rolls this weekend for their kids”

That’s the best feedback!

St Clements Cookies

These cookies were developed during #nosugarnovember.  I really enjoy them without the maple syrup….. My kids definitely prefer them with.

Sweetened with apples and orange juice (and maple syrup if you want) they’re refined sugar free, gluten-free, dairy-free and a delicious healthy snack.

Peanut Butter Chocolate Brownies

We have a group of over 100 people doing NoSugarNOvember. We are trying to discover more about which foods have sugar added that we wouldn’t expect to have sugar in….. mayonnaise, miso soup, sushi rice, bread etc…

We are not demonising sugar… it is just a food but by not eating refined sugar, dried fruit, sugar syrups (maple syrup/honey etc) for 1 month, we are trying to learn a little more about how to sweeten foods differently and maybe eat a little less sugar.

This recipe can be made with dates (67g sugar/100g) or if you’d like to cut down on your sugar intake,  try making it with overripe bananas (12g sugar/100g) instead. It’s not overly sweet….. but if you fancy a snack with a peanuty chocolatey flavour and a little sweetness…. these are good.

Mummy’s Mayonnaise

This is the mayonnaise my Mum used to make – I never even knew that Hellmann’s existed when I was young! I got my mum to show me how to make it and my husband said… “That’s so easy and good – why does anyone buy mayonnaise?” I won’t anymore. Made with just eggs, oil and vinegar – (no sugar needed) Everyone who has tasted it has agreed – it’s good. Try it.

Coronation Chicken Salad

What can we make with leftover Roast Chicken?
Coronation Chicken of course! It’s the perfect leftover dish because you can make it with lots of different leftovers – add different veggies to the salad, serve with rice or cous cous or challah, add raisins or apple – adapt it to make it your own.

Asian Vegetable and Noodle Broth

This soup is filling, full of vegetables and can be eaten as a complete meal. You can make it vegan by leaving out the eggs. It makes a great packed lunch and as my son kindly said “This tastes much better than it looks” Kids!!!! I think it looks great but there you go.

NO Sugar NOvember

No sugar NOvember – We know that there is a lot of added sugar in our food, so to be more aware I have decided to do NO sugar NOvember with anyone else who wants to join me. We have more than 60 at the moment.  Throughout November I will avoid :-
1) All refined sugars
2) Natural sugar syrups like honey & maple syrup
3) Dried fruit
I will eat fresh fruit
So….. I’m going to check all ingredients carefully.
Look at the sugars on the nutritional labels and try to avoid anything over 5g/100g
I will make my granola without maple syrup, avoid Hoi sin sauce, baked beans, sushi rice, mirin etc. I’m going to swap my usual bread to Vogels bread (not a problem cos I
❤️ Vogels)

Hopefully I’ll become a little more aware of added sugars, my teeth will thank me and I will possibly lose a few lbs.

Pea Soup

Peas are a brilliant source of plant-based protein and fibre. This soup is the most fantastic vibrant green and is so easy to make. It costs  £1.67  for the whole pan of soup.  Perfect for packed lunches too.

I made a huge saucepan today for lunch and the 5 teenagers and I finished it all off!
